Decaf Zumachi - 227g
Ethyl acetate (EA) – This naturally occurring ester (found in bananas and produced as a by-product of fermented sugars) can be isolated and then used as a solvent to bind to caffeine and extract it from green coffee.
First, the coffee is sorted and then subjected to gentle steam for 30 minutes under low pressure in order to open the pores of the beans and prepare them for decaffeination.
The beans are then placed in a solution of water and ethyl acetate, where the EA begins to bind to the chlorogenic acid salts contained in the beans. The tank is emptied and refilled for approximately eight hours, until caffeine is no longer detectable.
The grains are then steamed again to remove any trace of ethyl acetate, although EA is only harmful to humans in very large quantities (400 parts per million or more).
The coffee is finally dried and polished before export.
